Recipe: Chicken & Asparagus Parmesan in Vodka Sauce

This recipe is TDF! Easy and relatively quick, it made for a scrumptious Friday night feast.  With an interesting twist on Chicken Parm, it is a great addition to any kitchen repertoire.








Ingredients:

4 boneless, skinless chicken breast halves (about 1-1/4 lbs.), pounded thin
1/2 cup Italian seasoned dry bread crumbs
2 Tbsp. grated Parmesan cheese
1 tsp. garlic powder
1/4 tsp. salt
2 eggs, slightly beaten
2 Tbsp. olive oil
1 jar Bertolli® Vodka Sauce made with Fresh Cream
12 spears asparagus, partially cooked
4 slices mozzarella 

Instructions:
  • Preheat oven to 425°.
  • Season chicken, if desired, with salt and ground black pepper. Combine bread crumbs, Parmesan cheese, garlic powder and salt in shallow dish. Dip chicken in eggs, then bread crumb mixture.
  • Heat olive oil in 12-inch nonstick skillet over medium-high heat and cook chicken, turning once, 8 minutes or until chicken is thoroughly cooked.
  • Evenly spread 1 cup Sauce in 13 x 9-inch baking dish, then add chicken. Evenly spoon 1/2 cup Sauce on chicken, then top with asparagus and mozzarella cheese. Bake 10 minutes or until cheese is melted and sauce is bubbling. Top, if desired, with shaved Parmesan cheese. Serve with remaining Sauce, heated.
Serves 4, Prep time: 20 min., Cook time: 19 min.

SJP + Halston = love



SJP is the new creative director of Halston Heritage, a less expensive extension of the famed label Halston.  If there was ever a celebrity fit to be a designer and/or work for a major label, Sarah Jessica is it.  In the 1960s and 70s, Halston was creating what would become iconic fashion statements.  He designed Jackie Kennedy's pillbox hat worn to JFK's inauguration.  And created the darling of the disco: the jersey jumpsuit.  After a disappointing re-birth in 2008, the brand is looking to generate some excitement and jumpstart the new Halston Heritage line which includes pieces ranging from $55-$595.  Above, SJP pictured in a dress from the new line on the set of SATC 2.  I can't wait to see what she brings to the line, and in a world where celebrity fashion lines are a common as celebrity rehab, you can bet all eyes will be on SJP and Halston, as she tries to rise above her celebrity status to create something truly substantial at the fashion house.

My Golden Globes Re-cap

While I missed the red carpet coverage due to being an awesome girlfriend and watching the end of the Jets/Chargers with LAS (which I'll admit I didn't totally mind doing), I caught up fast as I watched most of the Globes themselves and scoured the internet for pictures of my favorites today.  My favorite winners included Meryl Streep for Julie & Julia, Julianna Marguiles for The Good Wife, and Glee for fave show!  I was also really happy for Drew Barrymore as well.  Now on to the fashions...

I've put this little gem together of some of my favorite looks.  Lea Michele of Glee was channeling her inner SJP in Oscar De La Renta and January Jones was my favorite thanks to her adorable silk satin headband.  Enjoy the eye candy :)

Valentines that Give!  Ashley of Ashley Brooke Designs has added one additional design to her limited edition Valentines.  A pack of 10 postcards whose proceeds will go to help victims of the earthquake disaster in Haiti and they are uber cute to boot!




Personalized journals from the Paperwink!  Saw these on Daily Candy this week and they are super cute.  When you open the journal your contact info is on the backside of the label--sold in packs of three.

Soliciting Advice

Good Morning!

Now that I am well into my second official week as someone who works from home, I thought I'd reach out to the blogosphere for a little advice!  So my fellow, work from home-ers, what are your best tips and tricks for staying focused and being productive?  I'm a pretty organized and on task person, but there's always more to learn, and who better to ask, than you my readers?  So let me have it. What is your best advice?

My New Best Friend

I'm back from Atlanta and glad to be home!  We had a great time at the mart and I scored a couple of small cash and carry items that I really liked.  I'll share some of those with you later on but this morning I wanted to talk about my new fav. item!






I have the worst under eye circles in the world!  I am always looking for a miracle concealer to hide a plethora of sins and a couple of weeks ago I went to Ulta and bought Benefit's Erase Paste.  I had been looking at it for awhile and decided it was time.  The first time I used it, I used too much but I quickly got the hang of it and it works like a charm!  It conceals the dark circles and it really brightens the eye area.  And as a bonus, you use so little that even though it's a small pot, I know its going to last a long time.  Here's before and after from Sephora, this girls under eye circles aren't as bad as mine but you can see how well it covers:




I use it under my eyes are around my nose and then put the rest of my make-up on as usual!

Jack Frost

This morning I am trying to stay warm by sipping coffee from my Ashley Brooke Designs mug.  Tomorrow I will be on my way to Atlanta for market--it's one of my VERY favorite trips to take even though I'll be completely exhausted when I get back.  I've been to several markets in January and never has it been as cold as it will be come this weekend:






This presents a challenge for this native Floridian who's cold weather repertoire leaves much to be desired.  After putting together some outfits to wear, I realize shoes are my number 1 obstacle.  They need to be two things: warm and comfortable (I mean 12 hours on your feet is no small task).  Want to wager a guess as to how many of my shoes qualify for this??  Pretty much left me with riding boots and wellies.  The boots will definitely be used to the zenith of their potential and I decided I need a comfy flat to round out my looks for the weekend.  Enter endless and these gems from Puma:



Part sneaker, part ballet flat--cute right??  I'm hoping they fit and prove to be as comfortable as I think they will be!

2010, Day 1

I spent the first day of 2010 saying farewell to an old friend.




Well maybe old friend is a stretch but I guarantee thats how most life-long seminoles felt New Year's Day in Jacksonville and as they watched from home when Bobby Bowden took the field for the last time.  It was a great day full of celebration, nostalgia and most notably: victory!  Coach Bowden has a laundry list of professional accomplishments that any head coach would love to have, but his greatest loves have always been his family and his faith and football has never been his God.  My dad played for Coach Bowden so I feel a little more connected than most and have fond memories of running around the field house as a little girl long after my dad played his last down.  There will never be another coach with such a legacy, such integrity and such grace. Thanks for the memories, the laughs and the 34 years you spent building the program I love so much.
