Recipe: No Bake Energy Bites

I had seen this recipe being pinned to death on Pinterest, and as a snacker, I thought it might be a good thing to keep on hand for a quick healthy bite.  It originated on the adorable Smashed Peas and Carrots blog, written by super mom Maggie.  These are ridiculously good...like so good that my husband is obsessed with them and food to him is typically a source of fuel and little else.  Go make them...but go ahead and double or triple the recipe because I made ours Sunday night and they're almost gone! 

No-Bake Energy Bites  -print this recipe HERE-
(makes 18-20 bites)
1 cup oatmeal
1/2 cup peanut butter (or other nut butter)
1/3 cup honey
1 cup coconut flakes
1/2 cup ground flaxseed
1/2 cup mini chocolate chips
1 tsp vanilla

Swoon-Worthy Friday: Beach Getaway


With our 1st wedding anniversary just a day away, LAS and I are headed on our own little beach getaway this weekend to celebrate! I am busy packing all the essentials, including my beach cruiser, (which was coincidentally my wedding present from LAS), a sunhat, spring magazines and sunnies! I'm going to need a bag a la Mary Poppins to fit everything I want to bring...including the top tier of our wedding cake! Excited to share a few snapshots with you next week...

Gray Beach Day

LAS and I headed to beach this past Sunday for a couple of hours.  Rain, shine, sun, clouds, we love the beach.  So on a particularly gray Sunday, we didn't mind the clouds one bit.

Courtney is 21 and while everyone will say this about their person, she's AWESOME, and she actually is.  She is hands down THE funniest person I know, a history nerd buff and a zumba enthusiast.  She makes a mean margarita and is always prepared with hand sanitizer...because really who likes germs?

Books: Isn't that a pre-req for a History major?  She always a paperback or two on hand.

General You Tube Hysteria: She may have a penchant for hysterical You Tube videos of the kiddie pageant and Target Lady variety.

Monograms and Republicans: Because let's face it...the two naturally go together.

In all honesty, she may be my sister, but regardless she is always first on my list of my people I most enjoy being with.  She makes everything fun and no matter what you do, you'll be laughing hysterically the whole way through (ha! that rhymed).  She's smart and kind and incredibly witty and you would love her, I just know it.
