Weekday Lunches


I don't know about you but I'm always looking for new lunch and snack ideas and I find myself getting in ruts with what I'm eating. This is one of my favorite go-to lunch ideas and what's great about it is the combinations are endless and it can accommodate a variety of allergies (gluten, dairy, etc.). You can easily swap pasta for rice, quinoa, or cous cous. Here are some of my favorite pasta salad combos. What would you put together?!

BLT (pictured):

Protein: Bacon
Veggies: Tomato, carrots, broccoli
Dressing: Feta cheese and Caesar vinaigrette




Buffalo Chicken

Protein: chicken
Veggies: carrots, celery, cucumber
Dressing: hot sauce and ranch


Apple Almond

Protein: Almonds
Veggies (& fruit): apples, dried cranberries, asparasgus
Dressing: crumbled blue cheese and oil & vinegar

I totally love these - I've been big into bean salads and quinoa salads these days because I heart protein. Just pinned these for inspiration, I love the combos!!!
