A Thanksgiving Recipe

I thought I'd share a Thanksgiving (and Christmas) staple in our family with you: Toll House Pie!  Its easy to make and the ingredients aren't hard to come by.  Its reallllly good, like a gooey chocolate chip cookie in a pie shell-yum!




I Pre-made deep dish pie crust

Filling:
2 eggs
1/2 cup each of Flour, Sugar and Packed Brown Sugar
I cup of butter melted (cooled)
6 oz chocolate chips (add more or less if your heart desires)

Beat eggs until foamy, then add flour, sugar and brown sugar.  Beat until well blended, blend in butter and stir in chips.  Pour into unbaked pie shell.  Bake at 325 using a 9 inch pie pan for 1 hour.

Weekend Recap

Went to Tallahassee this weekend to visit my sister and attend the FSU game.  It was a great weekend!  The Noles won and it was defensive coordinator Mickey Andrews' last home game.  There was a really nice ceremony before the game and Dad went out on the field along with some other of Coach Andrews' former players and it was fun to see him out there.  After the game, we grabbed dinner with the g-parents and my aunt, uncle and cousin who was home from school for Thanksgiving.  Obligatory pic:

My interview from Friday was rescheduled so I'll keep ya posted on that after it happens next week!

Hellooo!

I'm here just feeling uninspired as of late.  Until today when sweet Maggie at It is Everlasting suggested I do a post of gift ideas and I decided to take it one step further and do a "guide" of sorts for the different people in our lives.  I already have lots of ideas but if you have something you think I should include or would like the submit something of your own email me at missmonogram@gmail.com

Food for Thought Saturday

I sent an email to one of my Sunday School volunteers that I look after Sunday mornings in my role as "Coach." (i.e. I make sure they have their lessons, supplies, snacks and get them whatever else they need on Sundays)  I thanked her for all she does in serving those kids and she wrote back and shared something that I just loved and thought you might too:

"...and in this crazy world I think the kids remind me what is really important in life - playtime, story time, God time, and snack time"

LOVE it.

Today rocks my socks

LAS got a job!!! It's a co-op which means they give him a one year contract and he'll work a regular 40 hour work week and probably take one night class for this masters.  Although there are no guarantees, they often offer people jobs after their co-ops.  I'm so proud of him and really excited for this opportunity.  It's great for him and great for us.  Today has been a good day.

Almond Crumb Crusted Salmon

LAS and I made the best dinner Sunday night!  My only regret is I don't have a photo--dang it!  Anyway, the main course was a delicious baked salmon with an almond crumb crust and I thought you might like the recipe (forgive me but L found it and I don't know where its from):

Serves/Makes:   6
Ingredients:
3 tablespoons Bread crumbs
2 tablespoons Finely chopped fresh Parsley
1 tablespoon Finely chopped almonds
1 teaspoon Dried Italian seasoning
1 dash Salt
1/8 teaspoon Pepper
1 Egg white
1 1/2 pound Salmon fillets, cut in serving Pieces
Directions:
Preheat oven to 425F and spray a sheet pan with nonstick cooking spray. Dredge fish in egg white, then into combined bread crumbs, parsley, almonds and seasonings. Bake 10-20 minutes until flakes with fork.

Per serving: 220 cal., 11g fat, 85mg chol., 125mg sod., 3g carb., 0g fiber, 0g sugars, 28g pro., 4 lean meat exchanges.
